Juan comes from a career in the culinary science world where he first learned of osmotic dehydration. About 3 years ago, Juan and his wife, Geraldine, brought their expertise to their own coffee farm, La Sirena, and founded Sens Coffee.
Starting with beautiful Castillo coffee cherries, Juan then applied his Osmotic Dehydration to co-ferment coffee along with the glucose from Mangos! The result is a tropical explosion of fresh juicy mango and sugarcane.
The coolest part of this partnership is that we got to taste this coffee with Juan in the flesh when Yellow Rooster coffee imports visited our cafe in Louisiana. We’re so stoked to finally share Juan’s work with Colombia Quindio Juan Puerta Mango, Our first co-ferment.
