Juan comes from a career in the culinary science world where he first learned of osmotic dehydration. About 4 years ago, Juan and his wife, Geraldine, brought their expertise to their own coffee farm, La Sirena, and founded Sens Coffee.
Starting with beautiful Castillo coffee cherries, Juan then applied his Osmotic Dehydration to co-ferment coffee along with the glucose from Colombian native fruits: Guanabana and Curuba! The result is a dynamic blend of fruit smoothie and floral citrus.
Since his first visit with us last year, our connection with Juan has only strengthened and we are overjoyed to share even more of his and his wife's work.
